Pan Fried Salmon on a bed of Steamed Spinach and Salsa

1 onion

1 green pepper

Tin of Chopped tomatoes

1 chilli

½ garlic clove

Bag of spinach

Salmon Steaks

 

Put chopped onion and green pepper into a saucepan with a table spoon of olive oil. Cook on very low heat with lid on for 10 minutes. Don’t allow the onion to brown. Add chopped chilli and garlic and stir for 1 minute. Add a tin of chopped tomatos, replace the lid and cook on low heat for a further 10 minutes. Spray a non stick pan with olive oil spray and cook salmon for 4 minutes on both sides. Mean while steam spinach and place onto a plate, top with the salmon then salsa
