Frittata and Salad

This is sautée onions, courgettes, peppers, aubergines, mushrooms etc (chop up everything into small cubes first) in a deep based frying pan. add herbs, seasonings such as salt pepper, chilli, etc if you want. Beat roughly 6 to 8 eggs and add to pan and gently cook bottom. Place in oven on gas mark 6 and cook for 10 or so minutes or until cooked. You can eat it hot or cold. Its great for on the go quick lunches as you have to always be prepared!
