Granola Bars

1 egg white
1 tsp cinnamon
3tbsp coconut oil, melted
1/2 cup coconut sugar or honey if you prefer
1/2 cup natural peanut butter
1/2 cup of nuts that you fancy. I use almonds and walnuts
1/2 cup dried cranberries
1/2 cup raisins
1/2 cup oats
1 tbsp water
Pumpkin and sunflower seeds. I add a good handful to the mix

You can experiment and add different nuts, fruit and seeds depending on your taste

Preheat oven to 300
In bowl combine oats, almonds, berries and seeds
In saucepan whisk oil, sugar or honey or combination of the two, peanut butter and cinnamon and water over a low heat
Let cool slightly and whisk in egg white
Pour over oat mixture. Stir
Spread evenly in baking tray and bake for 30 mins until top firm.
